Tasmanian Berries

At Westerway in Tasmania’s Derwent Valley, the Clarks grow older berry varieties for flavour, juice and colour. Soft, ripe and unlikely to survive the trip to the mainland, let alone life on a supermarket shelf. Bad news for retail, excellent news for us.

When University of Melbourne researchers surveyed pollinators at Westerway, they found thirteen different species of bee—including the greatest diversity of native pollinators recorded among the farms in the study. Old berry canes provide habitat, and spraying is kept to a minimum. As Richard says, if an insect has taken a bite, it has probably found a particularly good piece of fruit.

At harvest, ripe fruit is shaken from the canes; the rest stays put. “The bush is nearly telling us which fruit we can have,” says Richard. The berries are then rapidly frozen on the farm, holding a brief Tassie summer in place.

Westerway’s blackcurrants became Marionette Dry Cassis a decade ago. Today, blackberries and raspberries join them in Berry. Berry didn’t arrive alone. The final blend was refined through tastings with bartenders, friends and fellow distillers. Dark and earthy, tart and savoury, then lifted by the Clarke’s bright, juicy berries.
