A late-summer harvest of green walnuts from the Yarra Ranges meets the tang of lemon myrtle in Marionette’s Nocino. Expectedly camphorous in aroma, with a touch of chocolate courtesy of toasted wattleseed, it’s a classic Italian digestif with an Australian botanical twist. Saluti, mate.

Sweet, juicy Tasmanian blackcurrants turned into what could only be (but won’t be, for legal reasons) described as Ribena for adults. We call it a dry cassis because it’s a little more tart and has about half the sugar of its traditional French counterpart. Plush, zingy and sings with anything sparkling.

You can take the fruit out of Far North Queensland but it took a motley crew of liqueur-makers to work out how to take the Far North Queensland out of the fruit and turn it into a damn good daiquiri. Green clove spice from the skins, a zap of fresh pineapple acid and a big ol’ tropical punch of proper fruit flavour in every sip.
